Salsa Verde (Yellow Squash Saute)

Though no longer a vegetarian, I’ve subscribed to the Vegetarian Times magazine for several years. I find their recipes to be inspiring and creative. Their take on a hearty version of “salsa verde” is a seasonal favorite. Each year I wait in anticipation for the lovely squash and tomatillos to arrive, and promptly make this dish!

All too often Rhubarb ends up on the dessert table, especially when delivered with fresh strawberries! Not at Facebook group member Michelle Pasquaretta’s house this past week. She shared her lovely photos and recipe for a zesty Rhubarb Salsa, a little something different, in case you’ve had too much crisp!

Rhubarb Salsa:
Note: all measurements to taste

Dice: Add:
Rhubarb Lemon Zest
JalapeƱos Garlic Powder
Carrots Salt, pepper, and sugar
Tomatoes

Mix and enjoy. Yummy!
