Oh haha, yeah? I think I will in fact make creamsicles! It’s been a month since I said I would. I want to make fudsicles, too. I feel like those are both kid-friendly.

Hi Jeanne!
So, for the arancini, I do a 1:1:1 ratio on things:
1 cup risotto
1 egg
1 cup breadcrumbs (I like panko)

You can add cheese if you’d like. Also, if you’ve got 2 cups risotto leftover (I know, impossible to imagine), then just adjust as needed. I sometimes don’t feel like I need to add grated cheese to this. I will add some cubed mozzarella, but not tons.

Heat up vegetable oil. Shape risotto into balls. Fry em up. I like to serve with marinara sauce.

My hubby is a risotto addict as well — he makes it so well that I have trouble finding its match when we go out. We’ve done it with wheatberries. You need a lot more broth and it cooks for longer, but adds a nice complex flavor. I think we’ll try the roasted corn recipe. thanks!

the popsicles were so good — a little too grown up for my daughter though — I guess I skimped on the sugar syrup.

Wow, I love the photos your husband takes as well. The vegetables and the dishes look amazing!! I was on vacation and missed that weeks share – and these photos make me very sad to have missed it!
